Egg Yolk Flavor is a type of food additive designed to accurately simulate the characteristic flavor of natural egg yolk. Its core flavor focuses on the unique "rich fatty aroma and subtle fishy undertones" of egg yolk, and can reproduce the flavor of egg yolk in different processing states.
It is produced in two main ways: one uses fresh egg yolk as raw material, extracting characteristic flavor substances in egg yolk (such as sulfur-containing compounds, fatty acid derivatives, degradation products of egg yolk lipids, etc.) through processes like enzymolysis and distillation, retaining a more authentic natural feel; the other takes synthetic fragrances (e.g., trimethylamine, hexanal, ethyl decanoate, etc., which simulate the fatty and subtle aroma fishiness of egg yolk) as the core, compounded with emulsifiers (such as lecithin) and flavor enhancers to precisely regulate flavor layers, making it suitable for different product systems (water-based, oil-based, and milk-based).
